Easy Classic Elderflower Cordial
The heavily scented flowers make a wonderful, refreshing drink which, when stored in sterilized
bottles, will keep for several weeks. The cordial is also useful in many other recipes, like ice cream,
relish, and cocktails.
Ingredients:
2 ¼ lb Sugar (White, granulated)
6 cups Boiling water
4 Medium lemons washed
2 oz Citric Acid
30 large ElderFlower heads (stems removed)
1 lemon
Sliced for garnish
Directions:
1.) Place the sugar in a large saucepan, stockpot, or a large Pyrex bowl. Pour the boiling water
over and stir until all the sugar has dissolved and let cool.
2.) Grate the rind of the lemons with a fine grater and add to the sugar water.
3.) Slice the lemons into thick slices and add to the water.
4.) Add the citric acid and stir.
5.) Add the flower heads to the water and stir again.
6.) Cover with a clean cloth and leave to steep for 48 hours.
7.) Strain through a clean fine muslin cloth into a clean bowl.
8.) Using a funnel, fill sterilized glass bottles.
9.) Pour over ice, garnish with lemon slices, and enjoy.
